Oatmeal & Bean Pancakes

Diabetic friendly pancakes, loaded with fiber and nutrients. Use almost any bean, soaked overnight in plain water (soy bean, red bean, cannellini, pinto, Great Northern, white beans, black beans or other beans). The pancakes are heavier than traditional white flour pancakes and much more satisfying. Very good with agave nectar or fruit on top. Try blueberries or ripe peaches. Add a vegetarian breakfast sausage patty (we like Morningstar Maple Flavored Sausage Patties) for a complete Vegetarian/Vegan breakfast, low carb and low fat but great flavor and texture.

Hommos Bi Thine

The authentic lebanese chickpea hommos (humus). This is the recipe provided by the Lebanese Gastronomy Association so I hope nobody will argue about the autenticity :)

Baba Ghanouj - Middle Eastern Eggplant Dip

This is a classic Middle Eastern appetizer. I was given two small Chinese eggplants from a friend's garden, and decided to try my hand at this recipe. I'm not much of an eggplant fan, perhaps it's the seeds, or the tough purple skin, or maybe I've just had it overcooked and mush too many times. This dip was PERFECT though. Served it as a spread on homemade falafels, and had the leftovers with pitas.

Blueberry and Fig Jam-Low or No Sugar

The figs can be placed in the food processor to crush by pulsing till mushy with some chunks. Using a candy Thermometer will help knowing the setting point, which is at 220 degrees. This has an optional Grand Marnier for a little extra treat.

Chunky Roasted Tomato Ragu with Polenta

Ingredients (use vegan versions):

    non-stick cooking spray
    5 clove garlic, minced
    1 small onion, chopped
    1 medium fennel bulb, sliced thin then chopped
    3 small stalks celery, sliced crosswise
    8 mushrooms, sliced
    1 green bell pepper, chopped
    1 (14-ounce) can roasted organic crushed tomatoes (I use Muir Glen brand)
    1/2 cup red wine
    1 tablespoon olive oil
    1 (6-ounce) package organic Italian seasoned polenta, sliced into 8 pieces (I use Melissa's brand)

X-Potatoes: Fast, Non-Fat Vegan Meal

Ingredients (use vegan versions):

    2 russet potatoes, cooked, peeled, diced
    banana, sliced
    black bean and white corn salsa (Great Value works well)
    onion bagels (warmed up)

Directions:

Spread potatoes on a plate, spread bananas on top of that, then cover with salsa.  Serve with a bagel on the side.

I recommend cooking the potatoes in a sensor-type microwave with a potato button (it makes the cooking part really simple).  The salsa (when refrigerated) will cool off the potatoes so the meal can be eaten immediately. The bagel provides some complimentary protein for the beans, any grain will do.

Oatmeal with Black Beans, Vegetables and Fruit

Ingredients (use vegan versions):

    3 cups rolled oats
    1 - 15 ounce can black beans, drained and rinsed
    1 cups raisins
    1/2 cup ground flax seeds
    2 cups frozen mixed vegetables
    2 cups frozen blueberries
    1 cup frozen strawberries
    1 to 2 cups frozen, sliced bananas
    2 cup water

Directions:

1) In an 3 quart microwavable dish, add first five ingredients. Mix well and then pack down flat. Top with frozen fruit, spreading out to create a fruit layer. Pour water over mixture.

2) Leave uncovered and microwave for 9 minutes on high (time is for a ~1000W microwave).

Bean-not-Butter + Omega 3 (easy vegan bean spread)

Ingredients (use vegan versions):

    1 (15-ounce) can organic black beans or your favorite beans
    1 tablespoon organic flax seed oil

Directions:

1.  Add black beans to a container and mash with a fork.

2. Add flax seed oil and mix in. Add more oil or use less oil depending on the consistency you are looking for. (I have found that if too much oil is added, the flavor of the oil begins to compete with the flavor of the beans.)

3.  Refrigerate and use like (and in place of) peanut butter.

Notes:
This is a low fat alternative to peanut butter.  The only fat in this (flax seed oil) is the best veg...

Easy 'n Fat Free Rice Cooker Tumeric Rice

Ingredients (use vegan versions):

    3 cups brown rice
    water
    2 teaspoons turmeric
    1 cup raisins
    1/2 (15-ounce) can garbanzo beans or 1 cup pre-cooked garbanzo beans

Directions:

1. Add brown rice to a rice cooker.

2. Fill rice cooker with water to the 4 cup mark for al dente, plus a little more water for the raisins to absorb. (Also, add a little more water if you like soft sticky rice.)

3. Stir in turmeric, followed by raisins and garbanzo beans. 

4.  Cook according to rice cooker instructions.

Ingredients (use vegan versions):

    2 large baking potatoes
    olive oil
    1/2 medium onion
    1/2 green bell pepper
    1/2 small zucchini
    1 small can black olives
    1/2 red pepper
    handful of mushrooms
    fresh basil
    nutritional yeast parmesan
    Pizza Sauce:
    1 can tomato sauce     
    1/4 teaspoon onion powder
    2 cloves garlic, minced or pressed
    1/8 teaspoon fennel seed
    1/2 teaspoon oregano
    1/2 teaspoon dried basil
    salt and pepper to taste
    Nutritional Yeast Parmesan:
    1/4 cup nutritional yeast flakes

Yummy Easy Low Fat Carrot Ginger Soup

Ingredients (use

    1 bag of large carrots
    2 slices fresh ginger root
    4 cups of veggie broth

Directions:

Combine ingredients in pot, and cook until soft.  Add small amount of water if needed.

After cooling slightly, put into a blender, and blend until a smooth consistency.

Serve hot.

Low-fat Scalloped Potatoes

Ingredients (use
vegan versions):

    4 medium potatoes
    1 1/2 cups soy milk
    2 tablespoons flour
    1 teaspoon salt (or seasoned salt)
    1/2 to 1 teaspoon garlic powder
    1/2 to 1 teaspoon cayenne pepper
    1 medium onion, chopped

Directions:

Peel and slice potatoes thinly.  In a saucepan, combine soy milk, flour, salt, garlic powder and cayenne pepper and cook over medium heat until sauce thickens.  Add onions to sauce.

Layer casserole dish with half of potato slices.  Spoon half of sauce over slices and repeat with remaining potatoes and sauce.  Cover and bake in preheated oven at 350 degrees for 65 minutes.

Raiels Peperonata (fat free)

Ingredients (use vegan versions):

    5 bell peppers (tri-colored work best)
    1 package sliced mushrooms (6 oz)
    1 clove garlic minced
    1 can tomatoes, or 3 fresh tomatoes
    2 white onions
    3 tablespoon white or red wine vinegar
    1 teaspoon cane sugar

Directions:

Slice peppers into lengthwise strips. In nonstick skillet, add peppers, garlic, onions and saute with vinegar on medium heat for 10-15 minutes (or whenever onions appear slightly translucent).  While veggies saute, chop the tomatoes (if you're not using canned). Stir in the tomatoes and rest of the vinegar into the peppers, and cook for about 5 minutes more, until the liquid evaporates.

Sandis Fat Free Fried Potatoes

Ingredients (use
vegan versions):

    8 to 10 medium size Russet Potatoes
    salt, pepper, onion powder, Adobo, or any other seasoning
    Non fat cooking spay

Directions:

First, scrub potatoes and dice into bite size or smaller chunks. (I usually slice 4 or 5 potatoes  first, and then get them in the microwave while I dice the rest of the potatoes.) Second, put in a microwave safe dish.  Add any seasoning and microwave for 15 minutes.  Third, put the microwaved potatoes into a hot non stick pan (I use an electric skillet) coated with non fat cooking spray.  Add more seasoning if you like.  Fry and turn the potatoes until browned.  Enjoy!

    1 1/2 cups prepared polenta (4 servings)
    1 - 14 ounce can black beans, drained and rinsed
    1/4 cup salsa
    Handful cilantro, chopped
    1/4 teaspoon cayenne pepper
    1/4 teaspoon red pepper flakes
    Hot sauce, as desired
    Vegan sour cream, as desired
    Cooking spray or oil

    1 pound black beans, soaked in water over night
    6 to 7 cups water
    1 onion, cut in half (do not cut off the ends or it will fall apart)
    1/2 green bell pepper, whole with seeds removed
    4 to 5 cloves garlic, sliced in half
    2 bay leaves
    2 teaspoons cumin
    3/4 teaspoon oregano
    2 pinches red/cayenne pepper

Super Easy Black Beans & Salsa

Ingredients (use vegan versions):

    1 - 14 ounce can black beans (I use low sodium beans)
    1 cup salsa (I use Kirkland Brand Organic)
    1 - 4 ounce can roasted diced green chilies

Directions:

1) Combine all on the stovetop and simmer until warm.
